Hambúrguer no pão | Homemade hamburger


Há uns tempos, cruzei-me com um artigo numa revista norueguesa, sobre um pai que começou a dedicar-se à cozinha para poder oferecer aos filhos as refeições que eles mais gostavam de comer fora de casa. E quando falo em comer fora de casa, refiro-me aos hambúrgueres, pizzas, kebabs,... Foi, por isso, a vontade de querer agradar os filhos aliada à necessidade de lhes oferecer alimentos saudáveis e acima de tudo de conhecer aquilo que lhes oferece, que fez com que começasse a preparar e aperfeiçoar esses mesmos pratos para os mais pequenos. A acompanhar o artigo estavam fotografias deles, super alegres, a babarem-se para um hambúrguer no pão e uma pizza! Como vêm, não é difícil agradá-los! Ah, trazia ainda uma receita de onion rings que há imenso tempo quero experimentar.

Esta pequena introdução, só para vos dizer que foi esta a minha inspiração para fazer os pães de hambúrguer. Em casa dos meus pais, já há muito que se fazem hambúrgueres caseiros! Carne comprada no talho, picada na hora (Importante!), temperada em casa e tchana!! Hambúrgueres para congelar e ter sempre pronto quando nos apetecer! Por isso, foi só procurar um pouco por receitas de pão de hambúrguer e escolher. Mais uma vez a minha eleição foi o blog norueguês Trines Matblogg que tem sempre receitas deliciosas que nos deixam a salivar!!!! Como não gosto de pão branco, decidi fazer a receita que mistura farinha de trigo integral com farinha de trigo refinada.

Tal como os hambúrgueres, o pão também pode ser congelado! É uma refeição que se prepara rapidamente e claro, os miúdos adoram! Espero que vocês também gostem!

(Não quero ser pretensiosa, nem comparar os meus simples hambúrgueres caseiros com os do Mc Donald's (que para mim são uma perdição) mas estes ficam realmente muito bons! Não têm os molhos que nos deixam rendidos, mas têm um hambúrguer de verdade! Mas mais do que isso, tal como referi acima, sei o que estou a comer!)

Some time ago, I read an article from a norwegian magazine about a father that decided to dedicate himself to the kitchen in order to be able to give their kids a home version of the dishes that they love to eat out. I'm obviously talking about the hamburgers, pizza and kebabs... Anyway, the desire of making his kids happy, combined with the need of giving them healthy food and at the same time letting them know what it can offer them, made him start to prepare and improve those dishes for the smallest ones. The article also had some pictures with them looking to an hamburger and a pizza and the joy expressed on their faces said pretty much everything. Oh, and there was also a recipe for Onion Rings that i'm really looking forward to try.

This small intro was just to tell you that this was my inspiration for the hamburger bread. At my parents home it's almost a tradition to have these home made burgers! Minced meat bought at the butcher's shop (minced in front of you - important!) seasoned at home and... ta-da!!! Burgers ready to put on the freezer and eat whenever you feel like. I searched some hamburger bread recipes and I thought that the one on Trines Matblogg (which is always amazing) was the perfect one. Since i'm not a fan of white bread, i decided to make the recipe using a mix of normal wheat flour with whole wheat flour.

The bread can also be stored in the freezer just like the hamburgers! It's something that you can prepare really quickly and the kids will love it! I hope you do to!

(I don't want to seem pretentious nor try to compare my burgers with McDonalds' (which I love) but these are really good!! They don't have the addictive sauces but they carry real meat! And above all. you know what you are eating.)

HAMBÚRGUER NO PÃO
HOMEMADE HAMBURGER


Ingredientes
Ingredients


Para o pão (aproximadamente 10)
For the bread (about 10)

2,5dL de leite
1,5dL de água
1/2 colher de chá de açúcar
1 colher de chá de sal
15g de fermento de padeiro
150g de farinha de trigo integral
400g de farinha de trigo refinada
50g de manteiga sem sal em cubos
Água para pincelar e sementes de sésamo

2,5dL milk
1,5dL water
1/2 tsp sugar
1 tsp salt
15g fresh yeast
150g whole wheat flour
400g wheat flour
50g unsalted butter in cubes
Water to brush and sesame seeds


Para os hambúrgueres (4)
For the hamburgers (4)

4 pães de hambúrguer
400g de carne de vaca picada
2 dentes de alho picados
Sal grosso e pimenta q.b.
4 fatias de bacon
4 fatias de queijo flamengo
4 folhas de alface
2 tomates
1 cebola roxa

4 hamburger breads
400g minced cow meat
2 garlic cloves
Salt and pepper
4 bacon slices
4 cheese slices
4 lettuce leaves
2 tomatos
1 red onion



Preparação
Preparation

Para os pães, colocar todos os ingredientes numa taça, excepto a manteiga, e bater com as pás em velocidade baixa-média durante cerca de 10 minutos.

For the bread, put all the ingredients with the exception of butter in a mixer and knead for approximately 10 minutos on slow to medium speed.


Juntar a manteiga em pequenos cubos e bater até que toda a manteiga esteja bem misturada na massa, após 5-10 minutos.

Aumentar a velocidade para obter uma massa elástica e maleável.

Add the butter in small cubes and mix until all the butter is kneaded well into the dough, after 5-10 minutes.

Increase the speed along the way to get an elastic and pliable dough.


Cobrir com um pano e deixar repousar até duplicar o volume (cerca de 45-60 minutos).

Cover the bowl with a lid and let rise until double in size (about 45-60 minutes).


Colocar a massa numa superfície polvilhada com farinha e dividir em 10 pãezinhos.

Amassar com as mães para ficarem redondos, pressionar com a palma da mão e colocá-los num tabuleiro de forno forrado com papel vegetal.

Put the dough on a floured surface and divide ir into 10 pieces.

Round them up, press flat with your palm and place them on the baking tray with tracing paper.


Deixar crescer tapados por um pano durante 30 a 45 minutos.

Let them rise under a cloth for 30-45 minutes.


Pincelar com água morna e polvilhar com sementes de sésamo.

Levar ao forno a 225ºC durante 10 a 15 minutos.

Brush the breads with warm water and sprinkle with sesame seeds.

Bake the breads at 225ºC for 10-15 minutes.


Para os hambúrgueres, temperar a carne com o alho, o sal e a pimenta.

For the burgers, season the meat with the garlic, salt and pepper.


Dividir a carne em 4 e com a ajuda de um utensílio adequado ou com as mãos, fazer os hambúrgueres.

Divide the meat in 4 and with help of an hamburger press or using your hands, make the burgers.


Numa frigideira, grelhar o bacon até ficar bem estaladiço.

Rejeitar a gordura que sobrou e grelhar os hambúrgueres durante cerca de 5 minutos.

Assim que estiverem prontos, colocar o queijo por cima e deixar na frigideira até que fique bem derretido.

Grill the bacon on a skillet, until it gets crispy.

Throw out the fat in the skillet and grill the hamburgers for about 5 minutes.

When they're ready, put the cheese on the top and let it melt.


Para montar o hambúrguer, colocar por cima de uma das fatias do pão, a alface, o tomate, a cebola, o hambúrguer e o bacon.

Cobrir com a parte de cima do pão e servir com batatas fritas, ketchup e maionese.

To finish, put the lettuce, a tomato slice, an onion slice, the hamburger and one bacon slice in a slice of bread and cover with the other.

Serve it with chips, maionese and ketchup.

Pão Naan | Naan bread


Há uns dias atrás resolvemos fazer um jantar indiano com os amigos! Que giro, um jantar temático, podíamos começar a fazê-lo todas as semanas!!! Até que me lembrei, "comida indiana!? Mas eu só sei fazer caril!". Chamar um jantar de indiano pressupõe entradas, prato principal e sobremesas típicas!
Foi aí que me lembrei do fantástico pão naan que comi no franchising House of Curry no Dubai! Que jantar incrível! Daqueles em que é difícil parar de comer, mesmo quando já estamos mais do que satisfeitos. Começou logo a abrir com um pão naan quentinho, com alho ou com queijo derretido que acabou por acompanhar o resto do jantar também, de tão bom que estava. Depois disso 4 tipos diferentes de caril, todos óptimos e picantes! (e eu que só conhecia o caril comum do supermercado!!!) Como podem imaginar, não houve espaço para sobremesas, nem sequer para pedir a lista! Por isso, não faço a mínima ideia do que é uma sobremesa típica indiana! Problema!!!! Jantar indiano sem sobremesa indiana! Acabei por não conseguir pesquisar nada a tempo mas prometo fazer uma pesquisa para melhorar os meus jantares temáticos! Acabei por fazer uma sobremesa à pressão. Ficou óptima na mesma e no fundo o que conta mesmo é estar com os amigos à volta da mesa, comer e beber bem! Sendo assim, o jantar indiano ficou pelo pão naan e pelo caril de frango com ananás e leite de coco (porque é assim que eu sei fazer, mas depois daqueles que experimentei, até tenho medo de ofender os senhores da Índia ao chamar aquilo de caril!!!!)

Resolvi então fazer uma pesquisa afincada por receitas de Pão Naan na Internet e estudá-las. Sabia à partida que dificilmente conseguiria eu mesma fazer um pão naan tão bom como o que tinha experimentado, por isso não estava com expectativas muito altas, mas achei que valia a pena experimentar. Optei pela receita de um blog norueguês que adoro e sigo semanalmente - Trines Matblog. Tem uma variedade de pratos para todos os gostos - entradas, sobremesas, diferentes tipos de pães, pratos típicos de diferentes países, receitas saudáveis, outras mais calóricas, simples, outras mais elaboradas,... Mas sempre com um excelente aspecto! Passem por lá, com a ajuda do Google Translate fica fácil de perceber e digam lá se não vale a pena? 

Quanto ao pãozinho, apesar de não ter ficado tão bom como o que tinha provado (o que já imaginava!) estava muito, muito bom! Todos adoraram, incluindo os mais pequeninos. Deixo-vos a receita com a garantia de que vale a pena!

Some days ago, we decided to make plans for a theme dinner with some friends! It's a really nice idea and it's something we can plan for almost every week with different themes. When it was settled that "indian food" would be the theme for the first one, I remembered that I only know how to make curry!! What about all the other stuff such as starters and typical deserts?!
That's when I remembered the amazing naan bread that I had at House of Curry in Dubai. It was an unbelievable dinner - I just couldn't stop eating!! It started with some fresh out of the oven naan bread (simple, with cheese and with garlic). It was so nice that we just kept on ordering it throughout dinner. Then we tasted 4 different types of curry - all of them amazing and spicy! As you can imagine, there was just no room left for deserts... we didn't even order the menu! That's the reason why I don't have a clue of any type of indian desert and that's also the reason why there was no desert planned for our indian themed dinner. I ended up making a quick desert. It was good anyways and I guess that what really matters is the company of good friends around a table. In the end, our dinner consisted of naan bread and chicken curry with pineapple and coconut milk (because that's the only way I know how to do it but now that I tasted those exquisite ones, I'm afraid to offend people from India when calling it curry!!).

I decided to make a refined search on the Internet to find the perfect Naan Bread recipe and study it. I knew that I would probably not be able to bake such a good bread as the one I had tasted so my expectations were really small, but I decided that I wanted to try it anyway. I found a recipe that I liked on a norwegian website that I follow regularly - Trines Matblog. It has a great variety of dishes - starters, deserts, different types of bread, dishes from all around the world, healthy recipes, not so healthy recipes..... But always looking great! Stop by the website (use the help of Google Translate) and see for yourselves.


As for the the bread, even though it wasn't as good as the one I had had at the restaurant (as I imagined) it ended up being very very good. Everyone loved it, including the little ones! I will leave you the recipe with the promise that it's really worth it!

Naan bread

Ingredientes
Ingredients

15g de fermento de padeiro
4 colheres de sopa de leite
2 colheres de sopa de açúcar
450g de farinha
1/2 colher de sopa de fermento em pó
1/2 colher de chá de sal
1,5dL de leite
1,5dL de iogurte natural
1 ovo batido
2 colheres de sopa de manteiga sem sal derretida 

Manteiga sem sal derretida
Alho picado
Sementes de sésamo pretas ou coentros frescos picados


15g fresh yeast
4 tbs milk
2 tbs sugar
450g flour
1/2 tbs baking powder
1/2 tsp salt
1,5dL milk
1,5dL yogurt
1 egg 
2 tbs melted unsalted butter

Unsalted butter
Garlic
Black sesame seeds or fresh coriander


Preparação
Preparation

Misturar numa tacinha o fermento de padeiro, o leite morno e o açúcar e reservar durante alguns minutos até começar a borbulhar.

Mix the fresh yeast, the warm milk and the sugar in a small bowl and let stand warm for a few minutes until it starts to foam.


Colocar os ingredientes secos numa taça e juntar a mistura de fermento, o leite, os ovos, a manteiga e o iogurte. Bater (com pás de massa) durante cerca de 10 minutos, até obter uma massa elástica e suave.

Put all dry ingredients in a mixing bowl and add the yeast mixture, milk, eggs, butter and yogurt. Run a food processor for about 10 minutes, until you have a smooth and elastic dough.


Cobrir a taça com um pano e deixar a massa crescer durante cerca de 1 hora num local quente.

Let the dough rise in a warm place for about an hour, until doubled in size. 



Cerca de 20 minutos antes de cozinhar o pão, levar um tabuleiro ao forno na temperatura máxima.

Colocar a massa numa superfície polvilhada com farinha e juntar um pouco mais de farinha se achar necessário.

Dividir a massa em 8 ou 10 porções mais pequenas. Esticar a massa até obter círculos com cerca de 3-5mm de altura.

Aquecer numa tacinha a manteiga com o alho bem picado até derreter.


Pincelar o pão com a manteiga derretida e polvilhar com as sementes de sésamo ou os coentros picados.

Colocar o pão naan no tabuleiro e levar ao forno imediatamente.

Cozer em modo grill durante 3 a 5 minutos e polvilhar com sal grosso.

Para manter quente, embrulhar os pães em papel de alumínio até serem servidos.

About 20 minutes before baking the loaves place a baking tray in the oven and set to maximum cooking temperature.

Put the dough on floured surface and knead if necessary a little more flour if the dough is a little loose. 

Divide the dough into 8 or fewer topics rolled into small balls. Roll out the bowls to flat about 3-5 mm high.

In a small bowl, put the butter and the garlic very finely chopped and warm it to melt.

Brush every naan with butter and s
prinkle some black sesame seeds or finely chopped coriander.

Add 3-4 naan bread on the hot baking tray and put it immediately into the oven. 

Bake the loaves on grill function for 3-5 minutes and sprinkle some salt.

Store under a cloth or aluminum foil until they should be served.
