Cheesecake de chocolate branco e framboesas | White chocolate cheesecake and raspberries


Lembram-se de um post que fiz no facebook com uma foto da primeira encomenda da Baking Nanny? Pois bem, aqui têm a receita e as fotos! Não a publiquei mais cedo porque ainda há pouco tempo publiquei a receita do Cheesecake de Oreo e não quis que tivessem uma overdose de cheesecakes!

Assim que vi esta receita pela primeira vez (não preciso dizer onde, pois não? Está bem, eu digo... No blog Passion 4 baking!), fiquei rendida e disse que a tinha que fazer. Mostrei logo à minha amiga Sara, porque achei que tinha tudo a ver com ela. Foi ela a primeira a fazer e depois de saber que estava aprovada, não podia perder mais tempo. Adoro cheesecakes, adoro chocolate branco e adoro framboesas. O que podia correr mal? Fi-la pela primeira vez como sobremesa para um jantar de sushi (fotos) e acreditem que combinou na perfeição. Como qualquer cheesecake, deve ser servido bem fresco e num dia de sol como o que estava, foi a cereja no topo do bolo (não fui eu que disse, foram eles!).


Do you remember a picture I posted on facebook a while ago about an order that I got? Very well, here is its recipe and some pictures! I didn't publish it earlier because I had posted the Oreo Cheesecake not a long time ago and I don't want you to have a cheesecake overdose! 

The first time I saw this recipe (do I need to say where?! Ok..Surprise surprise - it was on the blog Passion 4 baking), I was mesmerized and I said to myself that I had to try it soon. I showed it to my friend Sara because I could feel that it matched her taste. She was actually the first to try baking it and after she told me how good it was, I could wait no longer. I love cheesecakes, white chocolate and raspberry. What could go wrong? I baked it at first as a desert for a sushi dinner and it matched perfectly! Like any other cheesecake, it was served really fresh and since the sun was burning, it fitted like a glove! (According to everyone's opinion!)


 

Tal como o cheesecake de Oreo, este também é gigante, ou não fosse feito com quase 1 kg de queijo creme! Claro que não há necessidade de tanta coisa se não for feito para muita gente. Da primeira vez que o fiz, como só éramos 4 a jantar, 1/3 da receita foi suficiente. Desta vez, como foi uma encomenda para uma festa de anos, resolvi fazer a receita completa, mas ainda assim disseram-me que foi muito. Por isso, deixo ao vosso critério as quantidades. E não se preocupem, porque funciona sempre!


E tal como todos os cheesecakes da Manuela Kjeilen, também este demora algum tempo a ficar pronto. São 3 horas no forno a 100º e pelo menos 8 horas no frigorífico para ficar com a consistência ideal. E acreditem que faz a diferença. O ideal, é fazerem no dia anterior a ser servido, para que fique bem fresquinho!

(Na receita original, o cheesecake é coberto com framboesas, mas neste usei morangos, a pedido da aniversariante!)

Just like the Oreo cheesecake, this one is also huge (the recipe has almost 1kg of cream cheese!!) Obviously, there's no need to make it so big if you're not planning to serve it to a lot of people. First time I tried it, and since there was only 4 of us, 1/3 of the recipe was enough. This last time, since it was ordered for a birthday party, I decided to make the whole recipe but still they told me later that it was too much! That's why I leave the amounts of ingredients up to you and up to the occasion. It works the same way, regardless of the amounts! 

Just like all of Manuela Kjeilen's cheesecakes, this one also takes some time to get ready. It's 3 hours in the oven at 100º and at least 8 hours in the fridge so that it gets the perfect consistency. Believe me - It makes a difference! The best is to bake it the day before so that you can leave it in the fridge overnight.

(On the original recipe, the cheesecake is served with raspberries but this one has strawberries instead - it was the birthday girl's request!)

CHEESECAKE DE CHOCOLATE BRANCO E FRAMBOESAS
WHITE CHOCOLATE CHEESECAKE WITH RASPBERRIES



Ingredientes
Ingredients


Para a base
For the base

240g de bolachas digestivas picadas
2 colheres de sopa de açúcar
6 colheres de sopa de manteiga sem sal derretida

240g finely crushed Digestive biscuits
2 tbs sugar
6 tbs unsalted melted butter


Para o recheio
For the filling

900g de queijo creme (temperatura ambiente)
285g de açúcar
2 colheres de sopa de pasta ou extracto de baunilha
4 ovos
100g de crème frâiche
150g de framboesas
150g de chocolate branco (derretido e frio)
200g de framboesas ou morangos para decorar

900g cream cheese (room temperature)
285g regular sugar
2 tbs vanilla paste or extract
4 eggs
100g sour cream
150g fresh raspberries
150g white chocolate (melted and cooled)
200g fresh raspberries or strawberries to decorate


Preparação
Preparation

Misturar as bolachas com a manteiga derretida e o açúcar.

Mix the biscuits with the melted butter and the sugar. 



Pincelar a forma com manteiga e colocar a mistura de bolacha.

Brush the side of a baking pan with some more melted butter and tip the biscuit mixture into the it.



Levar ao congelador durante 10 minutos e depois cozinhar no forno a 180ºC durante 10 minutos. Deixar arrefecer.

Reduzir a temperatura do forno para 100ºC.

Para o recheio, colocar o açúcar e o queijo creme numa taça e bater até que fique tudo bem misturado (atenção para não bater demais).

Place in the freezer for 10 minutes and then bake in a 180ºC oven for 10 minutes. Leave to cool.


Turn the oven temperature down to 100ºC.


For the filling, put the sugar and cream cheese into a mixing bowl and beat until it is well blended, but don't overmix.



Juntar os ovos, um a um, batendo sempre entre cada adição.

Add the eggs, one ata a time, beating just enough between each addition.





Juntar a pasta de baunilha, o crème frâiche e o chocolate branco. Mexer com cuidado até que fique tudo bem misturado.

Add the vanilla paste, sour cream and the white chocolate. Stir carefully until well blended.



Juntar as framboesas e envolve-las na mistura.

Add the raspberries and carefully fold them into the mixture.




Colocar o recheio por cima da base e levar ao forno a 100ºC durante 3 horas.

Pour the mixture onto the base and bake at 100ºC for 3 hours.


Deixar arrefecer completamente e levar ao frigorífico durante 8 horas.

Decorar com framboesas ou morangos.

Leave to cool completely and then chill for 8 hours.


Decorate with fresh raspberries or strawberries.

Bolo de beterraba com queijo creme e frutos vermelhos | Beetroot cake with cream cheese and berries


Já lá vai mais de um mês da celebração do dia nacional da Noruega, o 17 de maio! Mas como nunca é tarde demais para partilhar com vocês os meus docinhos, aqui fica a receita do bolo que fiz para celebrar este dia com a família Ravnum que tão bem nos acolheu! 

No dia 17 de maio, toda a Noruega festeja de uma forma muito particular o dia da Constituição Norueguesa ou o Nasjonaldagen. Arrisco-me a dizer que para a maioria dos noruegueses é o dia mais importante do ano, mais do que os aniversários ou o Natal! O país fica pintado de vermelho, azul e branco e em todas as cidades as pessoas, vestidas a rigor com o traje típico - Bunad - assistem ou participam nos desfiles das escolas e grupos culturais/recreativos, ao longo do dia, entre muitas outras actividades. Aqui ficam algumas fotografias tiradas pela Geisa Elmar (a mesma amiga que captura as fotos fantásticas que partilho aqui no blog) para terem uma ideia do que foi o 17 de maio aqui em Kristiansund. 

It's been more than a month since Norway's National Day, 17th of May! But it's never too late to share with you the things that I bake! :) Here is the recipe for the cake I baked to celebrate this day with the Ravnum family that welcomed us in their home (marvelously, I must add).

On the 17th of May, all the norwegians celebrate, in a very peculiar way, the Nasjonaldagen or the day where the Norwegian Constitution was born. I dare to say that for most of the people here it's the most important day of the year, even more than Christmas or birthdays! All the country is painted red, blue and white and all the people dress the typical costume - Bunad - in order to participate or simply watch the endless parades that the local city halls and clubs organize, amongst a lot more activities. Here are some pictures taken by Geisa Elmar (my friend that also captures some of my recipes with some great pictures) for you to have an idea of how the 17th of May was here in Kristiansund.





Bastante diferente do nosso 10 de junho, não acham?

Portanto, dada a importância do dia, quis fazer uma sobremesa que estivesse mais ou menos à altura! Coincidiu a altura em que encontrei o blog da Raiza Costa, uma brasileira que partilha, além de receitas lindas e fantásticas, várias técnicas de como utilizar os alimentos na doçaria, bem como as reacções químicas que ocorrem! Além disso, apresenta tudo em forma de vídeos super engraçados! Vale a pena conhecer o site - Dulce Delight. Foi lá que encontrei uma receita de um bolo red velvet feito sem corantes, apenas com beterraba, decorado com uma cobertura de queijo e frutos vermelhos! Ou seja, as cores da bandeira na Noruega! Estava encontrada a sobremesa ideal! Não arrisquei na receita original e por isso fiz umas ligeiras alterações, porque o que realmente me interessava era a parte exterior do bolo e deixei o red velvet para outra ocasião!

O meu bolo acabou por perder um bocadinho da cor quando foi ao forno, mas provavelmente foi por não ter seguido à risca a receita original. Espalhem os frutos vermelhos ao vosso gosto (não precisam de desenhar a bandeira da Noruega!) e têm um bolo óptimo e super fresquinho para uma sobremesa ou um lanche de verão! E não, não sabe a beterraba!! Confiam em mim?


So, since the day was so important, I wanted to bake something that could match it! It was about the same time I found Raiza Costa's blog, a brazilian girl that shares some beautiful and amazing recipes as well as some great techniques and also the chemical reactions that occur! Besides that, she also presents everything in some really funny videos! It's worth watch giving it a try - Dulce Delight. It was there I found the recipe of a Red Velvet cake with no artificial coloring agents and with some beetroot to replace them, and also with a red berry and cheese frosting! And these are no more than Norway's flag colors! I had found the ideal desert!! I didn't risk the whole original recipe so I made a few changes since what I really cared about was the outside. I decided to leave the Red Velvet part for the future.


My cake ended up loosing a bit of its color when it went to the oven but it was probably because I didn't follow the original script. Spread the red berries around the way you like it (you don't need to reproduce the Norwegian flag ;). They give a really fresh taste to the cake - ideal for a summer snack! And trust me - it doesn't taste like beetroot at all!!

BOLO DE BETERRABA COM QUEIJO CREME E FRUTOS VERMELHOS
BEETROOT CAKE WITH CREAM CHEESE AND BERRIES


Ingredientes
Ingredients

1 1/2 chávena de farinha
1 pitada de sal
1 colher de chá de fermento em pó
2 colheres de sopa de cacau em pó
3 beterrabas médias
100g de manteiga sem sal (temperatura ambiente)
1 chávena de açúcar
2 ovos
1/2 chávena de iogurte natural (sem açúcar)

Para o recheio e cobertura
200g de queijo creme
5 colheres de sopa de manteiga sem sal
1 colher de chá de extracto de baunilha
Frutos vermelhos para decorar

1 1/2 cup flour
Pinch of salt
1 tsp baking powder
2 tbsp natural cocoa powder
3 medium beetroot (chopped in food processor)
100g unsalted butter at room temperature
1 cup sugar
2 eggs
1 tsp vanilla extract
1/2 cup buttermilk

To frosting
200g cream cheese (room temperature)
5 tbs unsalted butter (room temperature)
1 1/2 cups icing sugar 
1 tsp vanilla extract 
Red berries to decorate


Preparação
Preparation

Pré-aquecer o forno a 180ºC.

Descascar as beterrabas e picá-las num processador.


Numa taça, juntar a farinha, o sal, o fermento e o cacau.

In a bowl add flour, salt, baking powder and cocoa powder.


Bater a manteiga com o açúcar numa outra taça. Juntar os ovos, um a um, a baunilha e o iogurte. Bater até que o iogurte esteja incorporado.

Whisk the butter with sugar. Add the eggs (one at a time), the vanilla and buttermilk. As soon as the buttermilk goes on stop whisking it. 

 

Juntar esta mistura aos ingredientes secos e misturar bem.

Add this mixture to the dry ingredients and stir well. 


Juntar a beterraba e envolver tudo.

Add the beetroot and stir it to combine.


Levar ao forno durante 35 minutos numa forma untada com manteiga e polvilhada com farinha.

Bake the cake for approximately 35 minutes in a baking pan with butter and flour.


Para a cobertura, juntar todos os ingredientes numa taça e bater durante 5 minutos até obter uma mistura fofa.

Deixar o bolo arrefecer completamente e usar a mistura de queijo para o recheio e para a cobertura. Servir com frutos vermelhos.

To make the frosting add all the ingredients together and whisk it for 5 minutes until very fluffy and combined.

Let the cake cool completely before frosting. Serve it with red berries on top.

Vanilla, chocolate and raspberrys cupcakes with cream cheese frosting


Está quase aí a época dos frutos vermelhos! E de Portugal, os meus pais já me fizeram chegar a notícia de que a extensa plantação de morangueiros está linda, já com frutos! Só peço que se aguentem até ao meu regresso. E eu sou daquelas pessoas que prefere fruta da época; sempre cresci rodeada por uma horta e as mais variadas árvores de fruto! Mas por vezes, acabo por comprar fruta importada e fora da época, quando tenho algum desejo ou principalmente quando quero fazer umas sobremesas, como é o caso da receita de hoje!

Foi só no ano passado que comecei a descobrir as sobremesas fantásticas que podemos fazer com framboesas, amoras, mirtilos... O doce com o sabor mais ácido destes frutos é uma combinação que me agrada muito! E se lhe juntarmos chocolate fico praticamente sem palavras para descrever quão incríveis estavam estes cupcakes! Já para não falar da cobertura de cream cheese, a minha favorita! Façam vocês mesmo e digam lá se não tenho razão! :)

Esta receita foi também retirada do blog Passion4baking da Manuela Kjeilen. Ao contrário do que esperava, deu para 30 cupcakes, que mais uma vez tive que distribuir pelos amigos e vizinhos!

Berry season is almost here! I heard news from my parents back in Portugal that their large strawberry plantation is looking gorgeous. I only hope that I can still get there on time to taste them. I'm one of those people that prefers season fruits; I grew up surrounded by all sorts of fruit trees! But sometimes I end up buying frozen and out of season fruit, usually when I have some weird desire for it or simply when I want to make a specific desert, which is the case of today's recipe.

Only last year I started to embrace the amazing deserts we can make out of raspberries, blackberries, blueberries... The sweet-sour mix is a combination that I really enjoy! And if you add up some chocolate, I am left with no words to describe how amazing these cupcakes were! Not to mention the cream cheese frosting, my favorite! Do it yourselves and then let me know if I'm right or wrong! :)

This recipe was also taken out of Manuela Kjeilen's Passion4baking blog. Surprisingly I ended up having enough for 30 cupcakes, which I had to pass along to friends and neighbors once again.

Vanilla, chocolate and raspberries cupcakes with cream cheese frosting


Ingredientes
Ingredients

200g de manteiga dem sal
3dL de açúcar
4 ovos
7 dL de farinha
2 colheres de chá de fermento em pó
1 vagem de baunilha (sementes)
5dL de molho de baunilha 
100g de chocolate preto
100g de framboesas
2 colheres de chá de extracto de baunilha

200g unsalted butter
3dL sugar
4 eggs
7 dL flour
2 tsp baking powder
1 vanilla bean (seeds)
5dL vanilla sauce
100g dark chocolate
100g raspberries
2 tsp vanilla extract


Cobertura de queijo creme
Cream cheese frosting

150g de manteiga sem sal
3 dL de açúcar em pó
1/2 vagem de baunilha
300g de queijo Philadelfia
1dL de puré de framboesas
Raspa de 1/2 limão

150g unsalted butter
3dL icing sugar
1/2 vanilla bean
300g Philadelfia cream cheese
1dL smashed raspberries
Zest of 1/2 lemon


Preparação
Preparation

Ligar o forno a 200ºC.

Bater o açúcar com a manteiga e as sementes de baunilha.

Assim que estiver uma mistura fofa, juntar os ovos um a um, batendo bem de cada vez.

Adicionar o extracto de baunilha e misturar.

Numa taça, misturar a farinha com o fermento.

Juntar a farinha e o molho de baunilha ao creme anterior e misturar tudo com uma colher.

Juntar o chocolate grosseiramente picado e as framboesas e misturar.

Pre-heat the oven at 200ºC.


Whisk the sugar with the butter and the vanilla seeds.


When the mixture gets fluffy, add the eggs, one at a time, whisking it will each time.


Add the vanilla extract and mix it.


In a small bowl, mix the flour with the baking powder.

Add the flour and the vanilla sauce to the preview cream and mix it together with a spoon.


And the chopped chocolate and the raspberries and mix it.


Com uma colher de gelado, colocar a massa nas forminhas de cupcakes e levar ao forno a 200ºC durante 15-20 minutos.

With an ice cream spoon, put the dough in the cupcake papers and put it into the oven at 200ºC for 15-20 minutes.


Cobertura de queijo creme
Cream cheese frosting

Misturar numa taça o açúcar, a manteiga e a vagem de baunilha e bater até obter um creme fofo.

Juntar o queijo e o puré de framboesas (aquecer 1 minuto no microondas e peneirar para retirar as sementes) e bater mais um pouco.

Juntar a raspa de limão e bater mais um pouco.

Com um saco de pasteleiro, colocar a cobertura por cima dos bolinhos.

Mix in a bowl the sugar, butter and the vanilla seeds and whisk it until it's fluffy.

Add the cheese and the smashed raspberries (heat in microwave for 1 minute and sift it to remove the seeds) and whisk it a little more.

Add the lemon zest and whisk it.

Use a piping bag to put the frosting in the muffins.
