Leite creme | Crème Brûlée


Na semana passada, apercebi-me que nunca publiquei no blog uma receita de uma sobremesa tradicional portuguesa. E são tantas as que gosto, com receitas da minha avó ou da minha mãe... E questiono-me se estou a desvalorizar a nossa cozinha! Porque a verdade é que desde que comecei com o blog, descobri muitas coisas novas na doçaria que me têm fascinado e sinto uma vontade enorme de experimentar tudo e mais alguma coisa. Mas não, claro que não estou a desvalorizar a cozinha tradicional portuguesa. Antes pelo contrário, reconheço nela uma história e sabores inigualáveis e terei imenso orgulho se a puder partilhar com amigos de outros países/culturas. 

E como tinha que começar por algum lado, foi exactamente pelo simples e delicioso Leite creme. Lembro-me da minha avó o fazer quando era pequenina, depois a minha mãe até chegar à minha vez. E como não é uma sobremesa que coma com frequência, sinto muitas vezes desejos. E num instantinho tenho um leite creme pronto! Adoro comê-lo bem quentinho, com açúcar queimado por cima (o verdadeiro Crème Brûlée), ou apenas polvilhado com canela em pó. Tão simples e rápido de fazer, é também uma óptima maneira de aproveitar gemas, quando sobram de um outro doce.

Esta não será novidade nenhuma para vocês, porque na Internet encontram mil e uma receitas de Leite creme. Será apenas mais uma e tal como a Tarte de Amêndoa nunca serei capaz de prová-las todas e por isso dizer qual é a melhor. Mas fica aqui a garantia de que este Leite creme é mesmo muito bom, com um sabor muito equilibrado. Para se comer quente ou frio, como sobremesa ou a qualquer hora do dia, com açúcar caramelizado, canela ou até mesmo com compota de morango!

Prometo tentar trazer mais receitas tradicionais portuguesas. Tal como esta, a minha mãe tem um monte delas, por isso não há desculpa!

Last week I realized that I never published any typical portuguese recipe on the blog. I have so many favorite recipes from my grandma and from my mom.... Maybe I am undervaluating my own cuisine! The truth is that since I started the blog, I have discovered a lot of new things that have fascinated me and I feel the urge to try every single one of them. But no... I am not undervaluating the portuguese cuisine! On the contrary, I feel that it has an history and some amazingly particular flavors that I will have to share with friends from other countries/cultures.

Since I had to start somewhere, I decided to make the simple and delicious Crème Brûlée. I remember my granny made it when I was small and the tradition perpetuated to my mom and now to me! And since it's a desert I don't eat that often, I sometimes get the urge to eat it and BAM! - in less than 1 hour, I have it ready to eat! I like to eat it hot with burned sugar on top (the true Crème Brûlée), or simply powdered with cinnamon. So simple and quick to make, it is also a really good way to recycle egg whites when they are not used from some previous cake.

This will not be new to you because you can find a million Crème Brûlée recipes online. It will simply be one more and, like the Almond Pie I posted previously, I will never be able to try them all and decide which one is my favourite. But you can be certain that this Crème Brûlée is really really good and has a really balanced taste. You can have it hot or cold, as a desert or any other time of the day, with caramelized sugar, cinnamon or even strawberry jam!

I promise to bring you more portuguese recipes soon! My mom has a million of them, so I have no excuse!

LEITE CREME
CRÈME BRÛLÉE


Ingredientes
Ingredients

1L de leite gordo
3 colheres de sopa de Maizena
7 colheres de sopa de açúcar
6 gemas
1 pau de canela
Casca de limão
1 vagem de baunilha (sementes)
Açúcar para

1L whole milk
3 tbs Maizena
7 tbs sugar
6 egg yolks
1 cinnamon stick
Lemon zest
1 vanilla bean (seeds)




Preparação
Preparation

Colocar 1/3 do leite num tachinho juntamente com o açúcar e a Maizena e misturar tudo até obter uma mistura homogénea.

Adicionar o leite restante, a casca de limão, o pau de canela e as sementes de baunilha e levar ao fogo médio.

Juntar as gemas mexidas, mexendo sempre muito bem, com uma vara de arame, até engrossar.
Servir em doses individuais, colocar o açúcar por cima e queimar.

In a small pan, put 1/3 of the milk with the sugar and Maizena and mix it together until it's homogeneous. 

Add the remaining milk, the lemon zest, the cinnamon stick and the vanilla seeds and bring it to the medium heat.

Add the egg yolks previously mixed, always mixing with a wire whisk until it thickens.

Serve it in individual portions, put the sugar on the top and burn it.

Rolinhos de canela | Cinnamon Rolls | Kanelbulle




Este início de verão na Noruega tem-nos surpreendido com uns dias mais frescos e cinzentos. E sei que o mesmo se tem passado por Portugal. São esses dias de outono que me dão vontade de ficar no sofá com aquela trilogia magnífica - filme, manta e uma bebida quentinha para confortar. Que, na maioria das vezes, sabe bem, acompanhada por um doce quentinho. E foi isso mesmo que aconteceu no domingo passado...


These first days of summer here in Norway have surprised us with a couple of unexpected cold and grey days. And I know that the same has been happening in Portugal. Those kind of days make me want to lay on the couch with the famous trilogy of good things - movie, blanket and hot comfy drink. And, as we know, most of the times this drink can be sided by something sweet. That's what happened last sunday.



Apetecia-me um doce que me confortasse e que ao mesmo tempo combinasse com o chá, a manta e o filme. E uma vez que íamos receber amigos mais tarde para ver o jogo de Portugal, resolvi fazer uns rolinhos de canela. São originalmente chamados de kanelbulle, um bolo sueco que apareceu na sequência da primeira guerra mundial.  Aí em Portugal, sei que existe à venda no IKEA, se por acaso quiserem experimentar e não tiverem pachorra para os fazer! ;)

Provavelmente pela proximidade geográfica, são também muito consumidos na Noruega. E aqui pertinho de casa, há um jardim com um pequeno café chamado Bestemors Hage que em português significa Jardim da avó e que tem sempre estes e outros bolinhos frescos. É impossível passar por lá e resistir ao cheirinho a canela espalhado pela esplanada e pelo jardim. Além disso, tem uma decoração super querida que convida a entrar e ficar durante algumas horas...

I really felt like having a sweet that would both comfort me and match the hot tea, the blanket and the movie. Since we were welcoming some friends later on to watch Portugal's football match, I decided to bake some cinnamon rolls. They are originally called Kanelbulle and they first were made in Sweden following World War I. I know that they are for sale in Portugal at IKEA so if you want to try them and are lazy to bake them, check them out there. 

Since Sweden is Norway's neighbor, it's no wonder that these rolls are also very popular here. There is a very nice place 5 minutes from our house called Bestemors Hage (which translates to Grandma's Garden) that always has these and other types of pastry straight out of the oven. It's really hard to pass by this place and resist the cinnamon aroma spread in the air. Besides, it has a really nice decoration that invites you to go in and stay for hours...





Portanto, uma vez mais, fui ao blog da norueguesa Manuela Kjeilen e no meio de 5 receitas diferentes de kanellbuller, encontrei a perfeita!!! :) Com ou sem o glacé de queijo creme por cima, estes bolinhos de canela são uma perdição! Com café ou chá, são o lanche perfeito!

Tenho a certeza que vão adorar!!!


So, once more I went to Manuela Kjeilen's blog and I chose the perfect recipe (out of 5 different ones!!). :) With or without the cream cheese glacé on top, these cinnamon rolls are really hard to resist! Have them with some hot coffee or tea to make the perfect snack!

ROLINHOS DE CANELA
CINNAMON ROLLS


Ingredientes
Ingredients

250mL de natas
6 colheres de sopa de manteiga sem sal
6 colheres de sopa de pó de pudim de baunilha (ex. Boca Doce)
2 ovos
1 colher de sopa de açúcar
1 colher de chá de sal
500g de farinha
2 colheres de sopa de água morna
50g de fermento de padeiro

Para o recheio

4 colheres de sopa de manteiga derretida
100g de nozes
200g de açúcar amarelo
4 colheres de chá de canela em pó

Para a cobertura

150g cream cheese
8 colheres de sopa de açúcar em pó
3 colheres de sopa de sumo de limão
4 colheres de sopa de raspa de limão


250mL cream
6 tbs unsalted butter
6 tbs vanille pudding powder
2 eggs
1 tbs sugar
1 tsp salt
500g flour
2 tbs warm water
50g fresh baker's yeast

To fill

4 tbs unsalted melted butter 
100g nuts
200g brown sugar
4 tsp powdered cinnamon

To frosting

150g cream cheese
8 tbs icing sugar

3 tbs lemon juice
4tbs lemon zeist


Preparação
Preparation

Aquecer as natas, juntar a manteiga e misturar tudo até derreter.

Heat the cream in a small pan, add the butter and stir until melted.



Numa tacinha, dissolver o fermento na água.

Dissolve the yeast in the tepid water. Set aside for 5 minutes to activate the yeast.



Misturar numa taça o pó de baunilha, a farinha, o sal, o açúcar e os ovos.

In a mixing bowl, put the vanilla powder, the flour, the salt, the sugar and the eggs.



Juntar a mistura de natas e manteiga e o fermento.

Add the cream and butter mixture and the yeast.


Misturar tudo muito bem e bater numa batedeira com as pás de massa durante cerca de 8 minutos.

Deixar a massa na taça a repousar, coberta com um pano, até duplicar o volume.

Use the dough hook attachment and mix until everything is well blended, for about 8 minutes.


Place the dough in the mixing bowl, cover with the dish towel and leave to rise for about 40 minutes or until doubled in size.




Pré-aquecer o forno a 200ºC.

Colocar a massa em cima de uma superfície polvilhada com farinha e esticá-la, com a ajuda do rolo, dando-lhe uma forma rectangular.

Pre-heat the oven at 200ºC.


Turn out the dough onto a floured work surface and roll out to a large rectangle.




Para o recheio, pincelar toda a superfície com a manteiga derretida e polvilhar com o açúcar, as nozes e a canela.

To filling, brush the melted butter over the dough, then sprinkle with light brown sugar, cinnamon and walnuts.




Enrolar a massa no sentido do comprimento.


Starting from one long side, lightly roll up the dough.

Com uma faca afiada, cortar em mais ou menos 12 fatias e colocá-las num tabuleiro de forno forrado com papel vegetal. Cobrir e deixar crescer durante cerca de 20 minutos.

Using a sharp knife, cut the roll into approx. 12 pieces and arrange on a lined baking tray. Cover and leave to rise for about 20 minutes.



Levar ao forno durante 15-20 minutos.

Bake the buns for 15-20 minutes.



Enquanto os rolinhos estiverem no forno, preparar a cobertura, misturando todos os ingredientes.

Assim que estiverem prontos, retirar do forno e espalhar o glacé por cima.


While the buns are baking, make the frosting by mixing together all the ingredients.
As soon as the buns are out of the oven, spread the frosting over the buns.

Crumble de maçã com natas | Apple crumble with cream



Haverá melhor coisa no mundo do que a dupla maçã e canela?!? Claro que sim! Mas de facto é um par que combina na perfeição! Não há doce de maçã que eu conheça, que não tenha um bocadinho de canela. Em pau ou em pó, está sempre lá! Tarte de maçã, strudel de maçã, folhado de maçã, compota de maçã, bolo de maçã, crumble de maçã,... Todos eles têm um ligeiro sabor a canela! E não é óptimo?!?

Foi exactamente o crumble de maçã que escolhi para levar para o jantar em casa de uns amigos! Servido directamente do forno acompanhado com uma bola de gelado de nata!... Humm.... :) A receita é de um amigo mas continuo a achar que o crumble dele é melhor do que o meu! O que me leva a pensar que me deu a receita errada ou está a esconder algum segredo que não quer revelar, só pode ser isso! Não, claro que não é isso, mas a verdade é que nunca consegui obter uma massa de bolacha tão caramelizada como a dele! De qualquer forma, o sabor é excelente e quem provou, aprovou. Por isso, se confiarem, desafio-vos a experimentar e pode ser que o vosso fique ainda melhor!

Can there be a combo better than apple + cinnamon? Probably yes, but there is no denying that these two match perfectly! I don't think I ever tried an apple cake or desert that doesn't have a bit of cinnamon. Stick or powder, it's always there. Apple pie, apple strudel, apple jam, apple crumble.... all of them with the nice flavor of cinnamon. And it tastes great!!

I chose to bake an Apple Crumble to bring for a dinner party! Serve it straight out of the oven and sided with a ball of simple ice cream!... Humm... :) The recipe is "stolen" from a friend of mine but I always tend to think that it tastes better when he makes it. This makes me believe that he has a secret ingredient that he doesn't want to reveal! Nooo, of course not! But the plain truth is that I was never able to create a cookie dough as caramelized as his. Anyways, it tastes great and it was approved by the people who tried it. So, if you trust me, I dare you to make it and it could happen that yours turns out even better!

Crumble de maça com natas
Apple crumble with cream

A receita original é feita num pirex rectangular ou tabuleiro de forno e o crumble é servido com gelado de nata.
The original recipe is made on a baking tray and the crumble is served with simple ice cream.

Ingredientes
Ingredients

2-3 maçãs Golden ou Royal Gala
1 pacote de bolacha Short Cake
150g de açúcar
100g de manteiga sem sal
150g de farinha
Canela
Natas batidas ou gelado de nata

1 package of Short Cake biscuits
150g sugar
100g unsalted butter
150g flour
Cinnamon
Whipped cream or simple ice cream

Preparação
Preparation

Esmagar grosseiramente a bolacha (se preferir pode optar por esmagá-la em pedaços pequeninos ou mesmo triturá-la até obter um pó).

Crush the biscuits roughly (you can chose to smash them in small pieces or even until it turns into powder).


Numa taça, misturar a bolacha Maria, a farinha, o açúcar e a manteiga cortada em cubos ou derretida.

On a bowl, mix the biscuits, the flour, the sugar and the butter (cut in cubes or melted).


Misturar tudo muito bem com as mãos ou com uma colher.

Descascar e cortar as maçãs em fatias finas e colocá-las na base de um tabuleiro de forno.

Mix everything up with your hands or with a spoon.

Peel and chop the apples in thin slices and lay them on a baking tray.


Juntar por cima a mistura de bolacha e polvilhar com canela a gosto.

Add the previous mix on top and spray it with cinnamon (as much as you like).



Levar ao forno durante 15 a 20 minutos a 180º.

Bring it to the oven for 15 to 20 min at 180º.
